What has proven a real hit too are the resort’s Full Moon Dinners, so if your holiday coincides with one, you’re in luck because it’s an evening of dining delights not to be missed.
We start off with a chef’s choice of amuse bouche, continue with scallops carpaccio with reef fish tartar or asparagus salad, lemon sorbet to cleanse your palate, and carry with either herb roasted lamb rack with truffle oil, natural Niman Ranch tenderloin of beef and Pacific shrimp, poached Pacific red snapper or Maldivian lobster. All main are simply delicious so it’s not an easy choice to make! To wrap the meal up, we serve double chocolate cheesecake with pistachio ice cream and tropical fruits.
