Mohamed Aslam’s Scoop on Komandoo’s Food & Beverage Offering

Many of you have already met Mohamed Aslam, a.k.a. Asley, Komandoo’s Food and Beverage Manager. If not yet in person, you may have heard how Komandoo’s culinary scene is further developing and how your favourite bars keep getting better – Aslam is one of our team champions who can take a lot of credit for it. A familiar face in the Crown & Champa Resorts collection, Aslam is no stranger to F&B operations, having gained experience as a waiter, restaurant supervisor, F&B operations manager at Veligandu and as assistance F&B manager at Champa Central Hotel before joining us here at Komandoo in December 2018.

Despite the fact that Aslam was well familiar with Komandoo, he was still blown away by how attentive and welcoming the team are to guests; he’s saying that the service and personalisation are truly outstanding. The second thing that made a lasting impression was – wait for it – coconut ice-cream!

During his first months on the island, Aslam’s been kept busy with developing a new beach dining concept, introducing new coffee and making additional improvements to the service. He’s very proud of the personal touches that can be added to the candlelight dinners (these can be booked here;  be sure to talk to the team about the occasion being celebrate, dietary requirements and any special requests!), and how well-received the Sunday beach dinners are.

No one knows Komandoo’s food and beverage scene more than Aslam, so it is only fitting for him to provide a few more insider’s tips on the bucket list items you should tick off at the resort’s restaurants, bars and in-villa dining:

White: Michel Picard Chablis, Burgundy

Red: St Hallet Old Block Shiraz 2006

Champagne: Dom Pérignon
